I’m not good at sleeping. Rather, I’m not good at falling asleep. I’m a little too good at sleeping in.
The other night I was rustling around in bed at 3am very wide-eyed. I’d exhausted every Real Housewives Franchise and was too restless to devote my eyes to the pages of a book.
Naturally, like any sound minded human, my first impulse was to make pasta. This is a simple pasta, but I think the fact that you most likely have most everything on hand for this dish at any given moment is extremely comforting.
Like, when I couldn’t fall asleep, I wasn't actually ready for a dinner redux, but more-so felt the need to soothe my mind from a potential rabbit hole of negative thoughts, by giving my stomach something to be excited about. I chose to slurp long noodles straight out the pan as a mediative practice, instead of taking a sleeping pill or doom scrolling on TikTok. So, even though it absolutely abominated my digestive schedule, and was an overall weird move, I fell asleep soon after feeling lucky to have made and eaten this. And, comforted knowing it’s always there.
